The Ultimate Summer Salad is crisp, refreshing, light, colorful and full of bold flavors. And that folks, is what this salad brings to the table!
I’ve never had too much luck with tomatoes. Eating them, yes! But growing them, not so much.. Lucky for me, a few of our neighbors are wonderful at harvesting them and we get to help eat ’em! Lately we’ve had an abundance of tomatoes and cucumbers so I decided to throw my other favorite in, AVOCADO, and with a few key seasoning components, the Ultimate Summer Salad was born.

All you’ll need to do is chop up your cucumber, tomatoes and avocado in like sizes, slice your shallot and combine all your veggies In your serving bowl. Coat with olive oil, a squeeze of lemon juice, red wine vinegar, salt & pepper, and toss to combine. Refrigerate until ready to serve!
- 4 medium tomatoes
- 1 cucumber
- 2 avocado
- 1 shallot
- 1 T. red wine vinegar
- 2 T. extra virgin olive oil
- juice of ½ a lemon
- salt & pepper to taste
- Chop up all veggies in like sizes and place in your bowl
- Add you wet ingredients and salt & pepper
- Mix to combine
- Keep in the fridge for up to 3 days
- Marinate or serve immediately
