Hey guys!! I hope you all had a wonderful Labor Day weekend! We had a very fun, albeit busy, holiday weekend. Kicked it off Friday night at our local high school football game with friends. Spent our Saturday at the river, in a whopping 109 degrees!! Sunday we washed our cars, did some chores around the house and had our (adults only) couples fantasy football draft, which is always a GREAT time!! By Monday we needed a day of recovery… We napped, watched golf and by late afternoon decided to have a big Sunday-style BBQ! Now we are back into our routine and ready for the short week ahead!
As promised, here’s last weeks roundup of homework/ after school snacks.
I loveee this one!! Whole wheat tortilla, a little olive oil mayo, cheddar slice, & ham or turkey lunchmeat. Rolled, then sliced. Place a toothpick through the center to hold it together & top w/ a pickle!
A little sampler of fruits, salami, hard boiled eggs & crackers!
Here’s another snack both grown ups & kiddos alike will love! Corn, black bean “salsa” served with Ritz crackers, Fritos and veggie chips!
Throw together a can of drained corn, drained black beans, 1 chopped avocado, 1 roma tomato, lime juice, salt & pepper! For adults I like to add cilantro & red onion as well:)
My boys LIVE for pot stickers. We purchase the huge bag of Ling Ling (potstickers) at Costco and cook them all the time. They make a super yummy snack. I always have frozen edamame on hand as well. Serve it all up in a cute serving dish like this one, with a little soy sauce and you’re good to go!

This is very similar to the tray we have at our dining room table. Ours has a galvanized caddy for larger items and several small clear, plastic cups for crayons & erasers.
